  • 1 lb ground beef Can substitute with shredded rotisserie chicken or leave out for a meat-free version.
  • 32 oz frozen tater tots Can be replaced with tortilla chips for a nacho version.
  • 2 cups shredded cheese Use Mexican blend, or try pepper jack or cotija for different flavors.
  • 1 can black beans Drained and rinsed.
Seasoning
  • 1 packet taco seasoning Adjust based on preference.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  3. Stir in the taco seasoning and cook according to package instructions, adding black beans.
Assembly
  1. In a greased casserole dish, layer the cooked beef and bean mixture evenly.
  2. Top with frozen tater tots in a single layer.
  3. Sprinkle the shredded cheese over the top.
Baking
  1. Bake in preheated oven for about 45 minutes, or until the tater tots are golden brown and the cheese is melted.
  2. Let the casserole rest for 5-10 minutes before serving.
