  • 4 pieces salmon fillets Wild-caught salmon recommended
  • 1 head butter lettuce Gently washed and torn
  • 1 cup mixed vegetables Cucumbers, bell peppers, or any preferred options
  • 1 tablespoon olive oil For cooking salmon
For the Citrus Dressing
  • 2 tablespoons citrus juice Lemon or lime juice
  • 1 tablespoon honey Optional for sweetness
  • 1 teaspoon mustard Dijon preferred
  • 1 pinch salt To taste
  • 1 pinch pepper To taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
Cooking
  1. Place the salmon fillets on a baking sheet and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Assembly
  1. In a small bowl, whisk together the citrus juice, honey, mustard, salt, and pepper to make the dressing.
  2. On individual plates or a large platter, arrange the butter lettuce, top with mixed vegetables and cooked salmon.
  3. Drizzle with the citrus dressing before serving.
