  • 400 g Pasta Use your favorite type, such as spaghetti or penne.
  • 6 large Roma tomatoes The ripest tomatoes for best flavor.
  • 4 cloves Garlic Minced.
  • 1 bunch Fresh basil Chopped for garnish.
  • 60 ml Extra virgin olive oil For authentic flavor.
  • Salt to taste For seasoning.

  • 1 piece Burrata cheese Optional topping.
  • 60 ml Heavy cream For creamy variant.
  • 200 g Shrimp or calamari For seafood variant.
  • 1 cup Diced vegetables Such as zucchini, eggplant, or bell peppers.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  2. While the pasta is cooking, dice the Roma tomatoes and mince the garlic.
Cooking
  1. In a skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Add the diced tomatoes to the skillet and cook until they break down into a sauce, about 10 minutes.
  4. Once the pasta is al dente, reserve a cup of starchy pasta water, then drain the pasta.
  5. Add the drained pasta to the skillet with the sauce and toss to combine. Use reserved pasta water to adjust sauce consistency as needed.
Serving
  1. Plate the pasta and garnish with fresh basil and a drizzle of olive oil.
  2. Add optional toppings like burrata or toasted pine nuts if desired.

Notes
