Ingredients

For the Sauce
  • 4 cloves garlic, minced Fresh is best for maximum flavor.
  • 1 inch ginger, grated Use fresh ginger for optimal taste.
  • 1/4 cup soy sauce Substitute with tamari for gluten-free.
  • 2 tablespoons honey Adjust sweetness to your preference.
  • 2 tablespoons rice vinegar Add more for tangy flavor.
  • 1 tablespoon sesame oil For added depth of flavor.
Main Ingredients
  • 2 pounds chicken thighs or breasts Thighs are juicier; breasts can be used but be careful not to overcook.

Method

Baked Method
  1. Preheat your oven to 400°F (200°C).
  2. Whisk all the sauce ingredients together in a bowl.
  3. Place the uncooked chicken pieces in a baking dish and pour the sauce over them, tossing to coat.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the sauce is bubbly and caramelized.
Grilled Method
  1. Create a marinade by mixing the sauce ingredients, reserving about 1/4 of it for basting later.
  2. Marinate the chicken pieces for at least 30 minutes (or up to 4 hours) in the remaining sauce.
  3. Preheat your grill to medium-high and thread the marinated chicken onto skewers.
  4. Grill for 4-6 minutes per side, basting with the reserved marinade during the last few minutes of cooking.

Notes

For the best results, use fresh ginger and garlic. Don't crowd the pan when cooking to achieve a nice brown color.
