Wet Ingredients
  • 1/2 cup unsalted butter Should be at room temperature.
  • 1 cup brown sugar, packed More brown sugar equals chewier cookies.
  • 1/2 cup granulated sugar
  • 2 large eggs Can use one-handed egg crack technique.
  • 1 teaspoon vanilla extract
Mix-Ins
  • 1 cup chocolate chips Can substitute with butterscotch or dried fruit.
  • 1/2 cup walnuts, chopped Optional. Always label ingredients for allergies.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, oats, baking soda, salt, and cinnamon.
  3. In another large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the vanilla.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.
  6. Fold in chocolate chips and walnuts if using.
Baking
  1. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes or until edges are golden.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
