  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup heavy cream For the sauce
  • 1/2 cup sun-dried tomatoes Chopped
  • 2 cups fresh spinach Washed and chopped
  • 4 cloves garlic Minced
  • 2 tablespoons olive oil For frying

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook chicken for about 7-8 minutes on each side, or until fully cooked through. Remove from skillet and set aside.
Cooking the Sauce
  1. In the same skillet, add minced garlic and sauté for about 1-2 minutes until fragrant.
  2. Stir in sun-dried tomatoes and cook for another 2 minutes.
  3. Pour in heavy cream and bring to a simmer, stirring frequently.
  4. Add the chopped spinach and cook until wilted, about 2-3 minutes.
Combining
  1. Return the cooked chicken to the skillet and coat it in the cream sauce.
  2. Simmer for an additional 5 minutes, allowing flavors to meld.
