Ingredients

  • 4 pieces chicken thighs Skin-on, bone-in recommended
  • 1 cup dried apricots Chopped
  • 2 tablespoons olive oil For drizzling
Spice Blend
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon ginger Ground

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cumin, cinnamon, paprika, and ginger to create the spice blend.
  3. Rub the chicken thighs with olive oil and coat them with the spice blend.
  4. Place the chicken thighs in a baking dish.
Cooking
  1. Scatter the chopped dried apricots around the chicken in the baking dish.
  2. Cover the dish with foil and bake for 30 minutes.
  3. Remove the foil and bake for an additional 15 minutes until the chicken is golden and cooked through.
