- 6 tablespoons butter (unsalted works best)
- 8 cloves garlic, minced (about 2 tablespoons)
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup chicken broth or white wine (if you want extra sauce)

Getting Your Chicken Ready
- Prep that chicken: Dry the chicken breast pieces with paper towels to help them brown better. Cut into 1-inch cubes or bite-sized peces.
- Season everything: In a big bowl, mix the chicken pieces with olive oil, salt, pepper, paprika, and Italian seasoning. Toss until every piece is nicely coated.
- Give it a rest: Let the seasoned chicken sit for about 5-10 minutes at room temperature. This helps the meat relax and absorb all those yummy flavors.
Cooking Those Chicken Bites
- Get your pan hot: Heat your skillet over medium-high heat until it’s properly hot. This is super important for getting that nice golden color!
- Cook the chicken: Place the chicken pieces in the hot pan in a single layer. Don’t crowd them! Work in batches if you need to – crowding leads to steaming instead of searing. Cook for 3-4 minutes on one side without moving them around.

- Melt the butter: Using the same pan (don’t you dare clean it – those brown bits are flavor gold!), lower heat to medium-low and add your butter.
- Cook that garlic: Once butter is melted, add all that minced garlic and cook for 1-2 minutes until it smells amazing. Stir constantly so it doesn’t burn – nobody wants bitter garlic!
- Add the rest: Stir in lemon juice, chicken broth or wine (if using), and red pepper flakes. Let everything simmer for 1-2 minutes so the flavors can get to know each other.
- Reunite with chicken: Add the chicken back to the pan and toss everything together so each piece gets coated in that glorious sauce. Cook another minute to warm the chicken back up.
