Ingredients
  

  • 12 oz angel hair or spaghetti uncooked
  • 1 lb raw shrimp peeled and deveined
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter divided
  • 4 garlic cloves minced
  • 1 lemon zested and juiced
  • ¼ tsp red pepper flakes optional
  • Salt and black pepper to taste
  • ¼ cup reserved pasta water
  • 2 tbsp chopped fresh parsley

Equipment

  • Pasta pot
  • Colander
  • Microplane or zester
  • Tongs
  • Measuring cups/spoons

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve ¼ cup pasta water, then drain and set aside.
  2. Heat 1 tbsp olive oil and 1 tbsp butter in a skillet over medium-high heat. Pat shrimp dry and season with salt and pepper. Sear 1–2 minutes per side until just pink. Remove and set aside.
  3. Reduce heat to medium. Add remaining butter, olive oil, garlic, and red pepper flakes to skillet. Sauté 30–45 seconds until fragrant.
  4. Add lemon juice, lemon zest, and reserved pasta water. Stir to deglaze and form a light sauce.
  5. Return shrimp and cooked pasta to skillet. Toss everything together over low heat until shrimp are fully cooked and pasta is coated.
  6. Finish with chopped parsley. Serve immediately with extra lemon if desired.
