  • 8 oz cream cheese Use room temperature for best consistency
  • 1/2 cup butter
  • 3 cloves garlic, minced Fresh garlic is recommended
  • 1/4 tsp nutmeg Optional, adds depth of flavor
  • 1/4 tsp black pepper For seasoning
  • 1 cup alternative mild cheeses For a creamy texture
  • 1/4 cup pasta water Reserve before draining pasta
For Serving
  • 12 oz fettuccine pasta Cooked according to package instructions

Method
 

Preparation
  1. Cook the fettuccine pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
  2. In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the cream cheese to the saucepan, stirring until it melts and combines smoothly with the butter.
  4. Stir in the alternative mild cheese and mix until thoroughly melted and combined.
  5. Add nutmeg and black pepper, mixing well. Adjust the sauce consistency with reserved pasta water as needed.
Combining
  1. Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly.
  2. Serve immediately, garnishing with toasted panko breadcrumbs for texture if desired.
